                        <guid>https://www.dnata.com/media-centre/new-year-new-menus-brits-want-wellness-at-30000-feet-as-healthier-airline-food-tops-traveller-wishlists/</guid><pp:caseid>736216</pp:caseid><pp:subtitle>dnata Catering &amp; Retail survey finds passengers craving fresher, lighter and more functional options onboard</pp:subtitle><description><![CDATA[<p><strong>London, UK, February 4, 2026:</strong> With the February half-term break approaching and families gearing up for travel and time away, Britons are extending their focus on healthier habits beyond the gym and kitchen — all the way to 30,000 feet.</p><p>A new survey by the catering and retail arm of dnata, one of the world’s largest travel and aviation service providers, reveals that nearly half of UK passengers now put health and wellbeing at the heart of their inflight choices, signalling a shift towards lighter, more functional food in the skies.</p><p>According to the nationwide poll of 2,000 adults, 47% of UK flyers surveyed are/would be more conscious of wellness over indulgence when selecting meals and drinks onboard than they were five years ago. More than half (56%) want fresh, minimally processed ingredients, while 50% say airlines should offer low-sugar or low-carb options to better reflect modern eating habits.</p><p>From hydration-focused menus to immune-supporting snacks, travellers are bringing the same expectations they set for themselves at the start of the year into their time in the air.</p><h2>Wellness takes off</h2><p>Health and wellbeing are increasingly shaping how passengers approach flying, with inflight food and drink now seen as part of a broader self-care routine. This is reflected in what travellers want to see onboard, with 53% calling for more hydrating food and drink options such as electrolyte water and vitamin-infused beverages, 45% looking for more protein-rich meals, and 46% wanting low-calorie or portion-controlled meals.</p><h2>The rise of the functional flyer</h2><p>The appetite for functional nutrition is taking off. Nearly one in five passengers (19%) said they would pay extra for inflight meals or drinks that support gut health or immunity, while around 41% say they have already swapped alcohol for juices or vitamin-infused beverages when flying.<span>1</span></p><p>Younger travellers are leading this shift, steering the inflight experience towards a balance of health and enjoyment – favouring protein-forward meals, plant-based dishes, and beverages designed to hydrate and revitalise.</p><p>“Inflight dining is evolving just as fast as the passengers it serves,” said <strong>Robin Padgett, CEO of Catering & Retail at dnata</strong>. “Passengers are paying more attention to how meals make them feel during a journey, and wellness is becoming part of what a good travel experience looks like.”</p><h2>Raising the bar on inflight wellbeing</h2><p>While 46% agree airline food has improved in recent years, 41% believe wellness options still lag behind, highlighting an opportunity for airlines to continue evolving their menus.</p><p>With the UK’s functional food market now valued at more than £1.6 billion, consumer expectations are rising beyond taste alone to include nutrition, transparency and provenance.</p><p>Airline meals are increasingly being judged through the lens of everyday eating habits. From gut-friendly kombucha to balanced grain bowls and protein snacks, passengers want inflight menus to reflect how they eat in real life.</p><h2>The future of food in flight</h2><p>As passenger expectations continue to change, inflight catering is being shaped by a growing focus on balance, freshness and function, alongside the operational demands of serving food at altitude and at scale.</p><p>In the UK, dnata Catering & Retail operates at significant scale, serving 22 airline customers and producing around 20.5 million meals annually. The business supports more than 1,000 flights a day, with meals prepared by a team of 225 UK-based chefs working across dnata’s catering facilities nationwide. This footprint places dnata at the centre of evolving inflight food trends, offering a real-time view of how passenger expectations around health and wellness are shaping airline menus.</p><p>Drawing on consumer insight and industry experience, dnata Catering & Retail works with airline partners to understand how these preferences are influencing menu development and onboard offerings.</p><p>“Our research backs what we’re hearing across the industry,” Padgett added. “Passengers are embracing lighter, fresher, more functional meals, and airlines are increasingly thinking about how inflight food fits into the wider travel experience.”</p><p><strong>About the survey</strong></p><p>The research was conducted by Censuswide, among a sample of 2,000 nationally representative respondents. Some airlines will serve their guests a gentle starter of local prawn cocktail or mixed grain and cranberry salad before progressing to the showstopper. While passengers will consume a total of 6.9 tonnes of meat, a typical meal will include the essential ingredients, including savoury sage and onion stuffing, crispy roast potatoes, and tender Brussels sprouts. &nbsp;</span></p><p><span><strong>Global menu variations</strong></span></p><p><span>Travellers should save&nbsp;some space after their meal, however, with a choice of delightful gastronomical desserts which vary depending on where their journey begins. The traditional mince pie, Christmas cake and festive-themed chocolates are prepared for airlines jetting out of the&nbsp;<strong>UK</strong>. In&nbsp;<strong>Australia</strong>, passengers will be greeted with the choice of warm fruit pudding, Christmas pudding cheesecake, or gingerbread-spiced crumble topped mousse.</span></p><p><span>In the&nbsp;<strong>USA</strong>, a popular special dessert amongst American airline partners is Pumpkin pie with spiced mascarpone or cream, or Pumpkin cheesecake and stewed apples.</span></p><p><span><strong>Robin Padgett, Divisional Senior Vice President for Catering and Retail, dnata</strong>, explains the process of creating a festive menu: “An airline’s menus are planned out once per year, and many airlines have cyclical menus to reflect the seasonal changes.&nbsp;</span></p><p><span>“Festive menus are signed off in November, after they have been developed by our award-winning chefs. Recipes are then created for all our global stations along with loading and plating guides with photographs of each stage, to ensure consistent delivery.&nbsp;</span></p><p><span>“We also take the special requirements of our airline partners into consideration, with Halal-prepared meat as well as tasty vegetarian alternatives. In the UAE, it has recently transitioned its entire non-electric fleet to biodiesel at the two Dubai airports, Dubai International (DXB) and Al Maktoum - Dubai World Central (DWC).</p><p style="text-align:justify;"><span>In the financial year 2023-24, dnata reduced CO<sub>2</sub>e emissions by 2,200 tonnes by using over 1.3 million litres of biofuels globally.</span></p><p style="text-align:justify;"><strong>Converting GSE fleet</strong></p><p><span>dnata’s fleet strategy commits to phasing out diesel-operated engines and switching to hybrid, electric, or hydrogen wherever airports have provided the necessary infrastructure. As a result of its investments in recent years, 65% of dnata’s fleet is now electric in the Netherlands, 44% in Italy, 40% in the UK, and 39% in Switzerland.</span></p><p><span><strong>Significant improvement across key environmental performance metrics globally</strong></span></p><p><span>dnata recently reported significant improvements across key environmental performance metrics for the financial year 2023-24.&nbsp;As a result of its consistent approach and initiatives, the company cut the carbon intensity of its operations by over 8%, 22% and 26% across its airport operations, travel and catering businesses, respectively. Included will be the important ingredients of such a culturally important meal: turkey, sage and onion stuffing, roast potatoes, Brussels sprouts, finished with Christmas cake and mince pies. The most popular customer additions will be cranberry sauce and bread sauce.</p><p><strong>Robin Padgett, Divisional Senior Vice President for Catering and Retail, dnata</strong>, explains the process of creating a festive menu: “An airline’s menus are planned out once per year, and many airlines have four annual menus to reflect the seasonal changes.</p><p>“Festive menus are signed off in November, after they have been developed by our award-winning chefs. Recipes are then created for all our global stations along with loading and plating guides with photographs of each stage, so that the process is fool proof.</p><p>“We also take the special requirements of our airline partners into consideration, with Halal-prepared meat as well as tasty vegetarian alternatives. Special meals account for 45 per cent of total meals provided for our big airline carriers.”</p><p>dnata also provides catering services to airline partners via tailor-made on-board retail offerings. “We’ll ensure that passengers of our retail customers also receive the festive experience with turkey, cranberry and stuffing sandwiches and a mince pie to purchase as they make their special journey,” Robin says.</p><p>While producing such vast quantities of festive meals, dnata’s catering teams work closely with airline customers to analyse consumption trends and use predictive data to optimise the loading of F&B for in-flight catering. Analysis of on-board data not only reduces food waste but also fuel burn associated with carrying excess weight. In addition, where possible dnata Catering sources and supplies local produce to reduce the food miles associated with menus.</p><p>“We are proud that our global customers trust us to provide them and their passengers with the highest quality meals and locally sourced ingredients,” Robin concludes.</p><p><strong>Global standards, local menus</strong></p><p>In the <strong>UK</strong>, dnata Catering’s traditional roast turkey dinner will be served approximately 8,000 times per day. In addition, 10,000 tray set items including mince pies and festive-themed chocolates and beverages will be distributed.</p><p>In the <strong>USA</strong>, a similar main turkey meal is served. But rather than a mince pie, a popular dessert amongst American airline partners is Pumpkin pie with spiced mascarpone or cream, or Pumpkin cheesecake and stewed apples. This year, airlines have requested additional sweet treats. They include a Yule log and stuffed profiteroles, a gingerbread cookie and a salted chocolate truffle.</p><p>While 75,000 traditional roast turkey meals will be served in <strong>Australia</strong> for international customers, consuming 1.9 tonnes of meat, some airlines will begin with either a local starter of prawn cocktail or mixed grain and cranberry salad. Dessert will be a choice between warm fruit pudding, Christmas pudding cheesecake, or gingerbread-spiced crumble topped mousse.</p><p>dnata’s catering and retail division is one of the world’s leading inflight hospitality providers. They leave a long-lasting protective coating against new contamination of viruses, bacteria and fungi on surfaces, and are eco-friendly. The acquisition expands Dubai-based dnata&rsquo;s international portfolio, and will make it the sole shareholder of the biggest inflight catering, on-board retail and logistics company in the UK. The transaction is now subject to regulatory approval.</p>

<p>Alpha LSG was formed in 2012 by the dnata-owned Alpha Flight Group and LSG Sky Chefs; each holding a 50% share of the business. The agreed share purchase has the full support of the LSG Group and Alpha LSG operations will continue as usual.</p>

<p>Since its formation, Alpha LSG has grown into a competitive, industry-leading business. It has revenue of over &pound;290 million and employs 3,500 people across 15 airport catering facilities and two central production facilities in the UK. Each year it produces over 30 million meals, serving more than 160 thousand aircraft belonging to its 80 customers.</p>

This is the tenth key station in dnata&rsquo;s ground handling operations to receive this prestigious certification. The other ground operations which are also ISAGO-registered are Dubai (DXB and DWC), Geneva, Zurich, Manila, Singapore, Sydney, Melbourne and Brisbane.</p>
]]></pp:summary><description><![CDATA[<p>ISAGO is an internationally-recognised system for assessing the operational management and control systems of an organisation that provides ground handling services for airlines. It is based on industry-proven quality audit principles and is structured to ensure a standardised audit with consistent results across aviation businesses. The implementation of the ISAGO aims to improve safety as well as manage airline costs by reducing ground accidents and injuries.</p>

<p>dnata began its ISAGO certification journey in 2008. The process to be successfully registered is a rigorous one, requiring compliance with the ISAGO Standards and Recommended Practices at both the corporate and station levels. The standards cover Organization and Management Systems, Load Control, Passenger Handling, Aircraft Handling and Loading, Aircraft Ground Movement and Cargo and Mail Handling. An audit is then conducted by an airline member drawn from the ISAGO Audit Pool and registration is granted if the audit is successful.</p>

Effective 8 June 2016, the new &lsquo;one roof&rsquo; handling strategy being rolled out across the UK will further enhances the airlines&rsquo; joint venture partnership and promises more benefits for customers.&nbsp;</p>

<p>The move is designed to provide easier single drop-off and collection points for customers of both airlines and will deliver longerterm benefits such as faster truck turnaround times at London Heathrow and enhanced services for premium products.&nbsp;</p>

<p>For Virgin Atlantic, the new contract with dnata is a further extension of one of the longest-running cargo handling agreements in the UK, which first began in the late 1980s. The airline is dnata&rsquo;s largest cargo customer in the UK, moving more than 200,000 tonnes of cargo per annum, and it has handling contracts with dnata in Dubai and Australia. In 2015, Virgin also awarded the majority of its UK domestic UK trucking business to dnata.&nbsp;</p>

<p>John Lloyd, Senior Vice President Cargo, Virgin Atlantic, said: &ldquo;Our working relationship with dnata in London has such longevity because they not only consistently meet our stringent service level agreement but they also work with us to find other ways to deliver service improvements and efficiencies to our customers. Our &lsquo;door waiting&rsquo; times at Heathrow, for example, are already among the best at the airport but with the new technology being developed, dnata is confident they can be reduced even further. <p>Delta Cargo will join Virgin Atlantic in their dedicated 200,000 square foot Cargo Point facility, adjacent to London Heathrow&rsquo;s World Cargocentre. In support of the new contracts, dnata is making a multi-million pound phased investment which will include advanced control point technologies to further improve handling times for customers&rsquo; trucks when delivering and collecting cargo. The new system, which uses geo-fencing and advance information on drivers and their vehicles, will make customer interaction with Virgin and Delta&rsquo;s Heathrow cargo operations faster and more seamless. The new technology is currently being trialled by dnata ahead of its planned roll-out in Q1 2017. dnata will also work proactively with both airlines to support the continued growth of their existing products for perishable, temperature-controlled, pharmaceutical and high value cargoes.&nbsp;</p>

This is dnata&rsquo;s second passenger handling operation in the UK, supplementing its cargo operations at the regional hub.&nbsp;</p>

<p lang="EN">The company&rsquo;s ground handling operations at the airport commenced earlier this week with Emirates&rsquo; three daily flights, and, in December, dnata will add Cathay Pacific&rsquo;s four weekly flights from Hong Kong. To ensure the smooth handling of each flight, dnata hired 110 new employees from the area to support dispatch, along with ramp and passenger services. This more than doubles the company&rsquo;s employee strength at the airport.</p>

<p lang="EN">&ldquo;The UK&rsquo;s regional hubs are vital connectors of people and cargo,&rdquo; said Gary Morgan, CEO of <a href="http://www.dnata.co.uk/about-dnata/dnata-uk-profile" target="_new">dnata&rsquo;s UK operations</a>. &ldquo;We had already moved to a larger refurbished cargo handling facility at Manchester Airport earlier this year, and the addition of ground handling services is a vote of confidence in dnata&rsquo;s services and safety record.&rdquo;</p>

<p lang="EN">Each year, Manchester Airport welcomes over 21 million passengers. dnata has invested close to GBP 2 million in facilities, technology, and equipment to deliver ground handling services at the airport. The company will use a large range of ground support equipment to handle passengers and baggage for its airline customers.</p>

                        <title>Ramping up services for new handling contracts</title>

After acquiring contracts with ANA, US Airways, LATAM and Qatar Airways early in the year, our Ramp & Customer Services group faced a tight schedule to get everything organised before the new operations began on May 15.</p>

<p>The biggest challenge was taking on four new carriers concurrently and combining our teams, as Mike Cathrall, Customer Services Business Manager, explains.&nbsp; Despite the challenges, dnata achieved an impressive on-time performance of 99 per cent, delivering a consistent service to existing airlines while focusing on new clients.</p>

<p>As well as staffing pressures, the team re-coordinated their ramp handling operations as Steve Szalay, General Manager Ground Services, describes:&nbsp; &ldquo;We had known these contracts were coming and we had a major restructure last year to position ourselves into one combined ramp operation, ready to absorb the airlines we won. We assembled four different planning teams to ensure the carriers got the bespoke service they needed.&rdquo;</p>

<p>Mike adds: &ldquo;The handling has progressed very well. There have been some learning curves but, in general, all the preparation, hard work and dedication of the London Heathrow team made this a success.&rdquo;</p>

<p>Much of London Heathrow&rsquo;s general reshuffling has been triggered by the opening of Terminal 2, which is being staggered between June and September. With such a major change approaching however, all operations across London Heathrow are affected.</p>

<p>Steve points out: &ldquo;Passenger Services have seen the bulk of their business move to Terminal 4, Operations have moved to Terminal 3 and Ramp Services are consolidating a new home in Terminal 3. We are also looking forward to moving our Virgin Little Red service into Terminal 2 by September 2014.</p>

<p>So what&rsquo;s next for our passenger services team?&nbsp; &ldquo;The next challenge is to break down barriers between departments and make our staff more interchangeable and multi-skilled which will make for a more efficient operation and bring variety and an increased skill level to our staff.&rdquo;</p>

<p>DUBAI, UAE and LONDON, UK &ndash; 19 February 2014 &ndash; dnata and Qantas Freight announced today a partnership that will see <a href="http://www.dnata.co.uk/about-dnata/dnata-uk-profile" target="_blank">dnata&rsquo;s UK</a> business provide the Australian carrier freight ground handling at London&rsquo;s Heathrow airport. Under the agreement, Qantas Freight will relocate its UK office and all operations to dnata City&mdash;a purpose-built cargo logistics centre at the heart of the UK&rsquo;s largest airport.</p>

<p>The long-term partnership agreement will see dnata manage all aspects of freight handling for Qantas, which flies twice-daily A380 operations to Heathrow.</p>

<p>In total, the dnata City project comprises a 20-acre cargo complex centred around five air freight warehouses, a transportation facility and yard for airside operations enclosed in a security-fenced area. Three brand new facilities at dnata City will provide 206,000 square feet of new cargo space. The new, state-of-the-art buildings will consist of a 78,000 square foot cargo warehouse with 15,000 sq ft of office space; a 54,000 sq ft facility with 11,000 sq ft of offices and a 40,000 sq ft building with 8,000 sq ft of office space. The new facilities will also feature fully automated cargo handling systems, a dedicated AVI handling room as well as chiller rooms and valuable handling facilities. All are specially designed to handle peak freighter cargo alongside general cargo flows.</p>

<p>In addition to these three new facilities, the development will also encompass two existing buildings&mdash;the 140,000 square foot Cargo Point and West Point, which has a capacity of 79,000 square feet.</p>

<p>When complete, the enhanced complex will also encompass dnata&rsquo;s existing 60,000 square foot self-contained transport yard, where it has a fleet of 85 modern trucks equipped with GPS tracking equipment providing 24/7 coverage with 4,000 truck movements currently servicing 656 flights every week.</p>]]></description><category><![CDATA[Cargo,UK]]></category>

<p><strong>DUBAI, UAE and LONDON, UK, 30 October 2013</strong> &ndash; In an effort to further improve its cargo infrastructure in the UK, dnata has announced the opening of three new facilities at Gatwick, Birmingham, and Glasgow, expanding the company&rsquo;s cargo capabilities to five of the country&rsquo;s key regional airports including Heathrow and Manchester.</p>

<p>Development at the three additional regional airports complements the approaching opening of dnata City, Heathrow&rsquo;s newest cargo hub. The cargo facilities at Birmingham, Gatwick, and Glasgow will add 25,000 sq. ft., 17,000 sq. ft. and 15,000 sq. ft. respectively to dnata City&rsquo;s 206,000 sq. ft. of cargo capacity.</p>

<p>&ldquo;Adding cargo capacity at Birmingham, Gatwick and Glasgow airports supports the smooth flow of shipments throughout the UK,&rdquo; said Gary Morgan, CEO of dnata&rsquo;s UK operations. &ldquo;With these new facilities our customers have full UK coverage through the dnata UK network.&rdquo;</p>

<p>The expansion to three of the UK&rsquo;s key regional airports provides customers the opportunity to expand their import and export reach into the country. With a simplified service offering, dnata ensures cargo efficiently reaches its destination, throughout the UK.</p>

The new service required 50 dnata employees to be trained and ready for action. Operating from London Heathrow, the service offers multiple daily flights to Manchester, as well as Edinburgh and Aberdeen in Scotland.</h4>

<p>One of the most jaw-dropping facts about Little Red &ndash; aside from Richard Branson wearing a kilt at the launch ceremony &ndash; is that dnata hired a team of nearly 50 and trained them for six weeks prior to the launch. After start-up, the team received a further six weeks of training support.</p>

<p>Operating in three different shifts at London Heathrow, the team &ndash; including 39 ramp agents &ndash; is responsible for aircraft handling for arrival and departures and also baggage sorting.</p>

<p>Training the team did throw up a few challenges, according to Keith Wood, Service Delivery Manager. &ldquo;The biggest challenge we faced in training was the fact that the Little Red operation involves the loose-loaded narrow-bodied aircraft type.</p>

<p>&ldquo;This type of operation was new for dnata at London Heathrow Airport. Therefore the training package had to be bespoke for the Terminal 1 operation.&rdquo; He continued: &ldquo;However, as most of the staff had no airport experience, we were able to train them with best practice habits from the start.&rdquo;</p>

<p>When it comes to resourcing the new talent, Stuart Matheson, Project Delivery Manager, explains how a fluid shift strategy allows the teams to react to the situation on the ground.</p>

<p>&ldquo;Shifts work as one group, so they are all responsible for the safe and on-time departure of all the flights on their shift. When one of the teams on shift has a few spare minutes before their allocated task, they assist the other teams. It builds the ability to react according to what is actually happening in the operation, without having to be told by a manager.&rdquo;</p>

<p>Stuart explained that this method helps to smooth out any peaks of activity followed by troughs of inactivity.</p>

<p>&ldquo;The duty management can concentrate on quality and safety in the knowledge that the teams already have the resourcing issues covered,&rdquo; he added.</p>

<p>Virgin Atlantic and dnata have been working together for more than 25 years. During that time, the partnership has grown and now includes ramp handling for Virgin Atlantic&rsquo;s long-haul operations from Terminal 3 and its UK cargo handling business, in addition to the Terminal 1 short-haul operations. In this latest deal, starting from 31st March 2013, dnata&rsquo;s UK operation will begin ramp handling for Virgin&rsquo;s short-haul services from Terminal 1.</p>

<p>dnata currently services 21 daily flights for Virgin Atlantic&rsquo;s long-haul service from Terminal 3. Under the new short-haul contract, dnata will manage Virgin Atlantic&rsquo;s 13 daily flights of its A320 operation.</p>

<p>Forty six additional staff have been recruited by dnata at Heathrow as a result of this contract award which will provide a additional economic boost for the local area.</p>

The dnata City complex will also encompass the handler&rsquo;s existing 60,000 square foot self-contained transport yard, where it has a fleet of 85 modern trucks equipped with GPS tracking equipment providing 24/7 coverage with 4,000 truck movements currently servicing 656 flights every week.&nbsp;</p>

<p>At Manchester airport, Airblue, operating its first wide body A340 operation from Pakistan has signed a multi-year agreement for dnata to service its cargo handling business. The carrier, which flies four times a week to both Islamabad and Lahore will be utilising dnata&rsquo;s extensive UK handling network and inter-airport trucking service.&nbsp;</p>

<p>&ldquo;We were impressed by the partnership arrangement offered by dnata. We felt it was a real alternative in the market place and one that will help launch and grow our cargo product on this route,&rdquo; said Ghulam Raza Channa, Airblue&rsquo;s Country Manager, UK.&nbsp;</p>

<p>Further south in the UK, the team at dnata&rsquo;s London Heathrow operation have just begun providing cargo handling services for Aeromexico&rsquo;s B767 operation three times a week to Mexico City. As part of the agreement, the carrier will also have the ability to connect its London Heathrow service to the wider UK regional airports network by utilising dnata&rsquo;s inter-airport trucking services.&nbsp;</p>
